A Limburgse vlaai is a round, flat, fruit-filled tart from the southern Dutch province of Limburg, traditionally about 30 cm across with a yeast-dough base, fruit or rice-pudding filling, and a thin lattice or crumble top. Vlaaien are made for every Limburg occasion: birthdays, weddings, carnaval, kermis, funerals, sympathy visits. Common fillings include kersenvlaai (cherry), abrikozenvlaai (apricot), kruimelvlaai (crumble), rijstevlaai (rice pudding), and vruchtenvlaai (mixed fruit). The dessert is so identified with Limburg that vlaai in Dutch implicitly means “Limburgse vlaai” unless context says otherwise.
