What does “hamis” mean in a Hungarian recipe?

Hamis literally means false or fake — the same word Hungarians use for a counterfeit banknote or an out-of-tune note. This recipe borrows it for a lightened remake of an indulgent classic: a flourless, oil-free version of lángos made from whipped egg and curd cheese, officially called “felhő lángos” (cloud lángos), but the presenter calls it what it really is — “hamis lángos,” a fake lángos that skips the guilt.

The same word covers counterfeit money (hamis pénz) and a wrong note in music (hamis hang) — anything that looks or sounds right but isn’t. Calling a diet dupe “hamis” fits that pattern: this version looks and tastes like the deep-fried original, but it’s an impostor in the best sense, baked instead of fried and built without a gram of flour.
