What does “biztos, ami biztos” mean in Hungarian?

Biztos, ami biztos is what Hungarians say just before taking one precaution more than strictly necessary. Literally “what’s certain is certain,” it does the job of English “better safe than sorry” — an extra lock, a second backup, or, in the kitchen, a splash of oil stirred into pancake batter nehogy leégjen, “so that it won’t burn.”

The shape is worth copying: a bare adjective, then ami (“what, which”), then the same adjective again. Its polite cousin is a biztonság kedvéért, “for safety’s sake.” And the little word beside it here, nehogy, is the other half of a cautious Hungarian sentence — “lest, so that … not,” used whenever you are guarding against an outcome rather than aiming at one.
