What does “beurre pommade” mean in French recipes?
Beurre pommade is butter brought to about 20–30°C and worked until it’s as soft and smooth as an ointment (une pommade) — spreadable but never liquid. French recipes specify it precisely because the texture matters: creamed with sugar, beurre pommade traps air and gives cakes, sablé pastry and buttercream their lightness. Where English vaguely says “softened butter,” French names the exact state.
The test is tactile: you can crush it with a spatula but it doesn’t run. Recipes warn against the microwave, which melts unevenly and ruins the texture. You’ll meet it constantly in pâtisserie — madeleines, pâte sucrée, crème au beurre. The clip uses it for an almond cream: le beurre qui est bien pommade, beaten with sugar, eggs and ground almonds.
