This high-protein recipe sears one cut in particular: «Steka z antrykotu doprawiamy z obu stron» (“we season the ribeye steak on both sides”). Antrykot is ribeye, or entrecôte, the well-marbled cut from along the ribs.

Like much Polish kitchen vocabulary, it’s borrowed from French (entrecôte, “between the ribs”), the same drawer that gave Polish beszamel (béchamel) and majonez (mayonnaise).
