Why do Greeks call 'το κεφάλι από το φαγκρί' the best part?
Φαγκρί is common pandora, a Mediterranean sea bream Greeks treat as ο βασιλιάς των ψαριών (the king of fish). It’s prized grilled (ψητό), especially in spring when it’s fattest. The fish head holds the prized bits: cheeks (μάγουλα), the soft brain, sweet eye, and gelatinous skin. Greek diners often serve the head to the guest of honor.
In this clip, the cook flips the priority. Given a choice between a whole kilo of φαγκρί and just the head from a kilo φαγκρί, he picks the head: « Αν λέμε ότι το ψάρι είναι νόστιμο, το κεφάλι είναι το 100% » (if the fish is tasty, the head is 100%). The rest is « το 99% »: close, but not the prize.
