💡 Did you know?

What is 'crema d’aglio' in modern Italian cooking?

crema d’aglio
noun · feminine, modern technique
garlic cream: milk-poached garlic emulsified with olive oil, a Michelin-style upgrade of the classic aglio e olio sauce

Crema d’aglio is the chef’s-version garlic upgrade. Drop whole cloves into cold milk, bring to a boil, drain, repeat four times. The garlic loses its bite and turns sweet. Emulsify it with extra-virgin olive oil and you get a mayo-thick crema that coats pasta evenly, without the raw-garlic harshness of an old-school aglio e olio finish.

This clip stages it on 3D-printed nest pasta. The cook drops the cream onto strained noodles, scatters toasted breadcrumbs (brunoise leggermente tostata), then pipes a chili-oil and a parsley-oil for color. « È una pasta aglio, olio e peperoncino » (it’s a garlic-oil-and-chili pasta), but with a fine-dining finish.
